3 Minute Coconut Laddu for Diwali:
Well, perfectly honestly I have been wanting to make quick coconut laddus (coconut fudge) ever since I had seen it being made on television a year or two ago on one of the channels. It was a very quick recipe. I simply did not remember the measurements, since during such shows, they quickly whizz through the method with just a quick mention about the ingredients.
So I googled it and read briefly though a recipe by Chef Pankaj Bhadoriya. It was a coconut laddu recipe cooked on the hob. This is an adaptation from that recipe. I really wanted to try it using microwave, just so that I do not have to stand there and stir.
This recipe is almost like a twin to the peda recipe!
But, just 2 ingredients needed!
desiccated coconut – 2 cups (i used the ‘fine’ variety)
some extra desiccated coconut for garnish (i used a slightly thicker variety for garnish. of course the same fine sort can also be used)
condensed milk – 1/2 cup + 2 tbsp
in a deep microwave safe dish, mix the desiccated coconut and condensed milk well
microwave on high for 3 min, stirring well after every minute. you will notice that the mixture becomes more dry with every minute of cooking
allow it to cool slightly, enough to allow handling
grease your hands lightly (optional-I didn’t), tease out portions of the mixture roll between your palms and make a marble sized or slightly larger ball
now, roll this laddu over extra desiccated coconut just to cover half the ball, slightly pressing it as you do so, as to ensure the garnish doesn’t drop off
place it on a plate/serving platter
as mentioned earlier it can also be prepared on the hob. just keep stirring it on medium heat until it comes together forming a sort of ball. then prepare the laddus
if you wish you can roll the entire coconut laddu in extra desiccated coconut or even use nuts to garnish
