Lassi is a yogurt based Indian drink. Many different recipes of lassi can be prepared using ground spices, at times fruits. It is commonly consumed as a savoury drink prepared using salt and other ground spices. This Mango Lassi recipe is a sweet drink. It is a cooling drink especially apt for summer days. In fact, it can be a refreshing accompaniment to any meal.
I am using a single mango to prepare lassi for 2 people only.
Mango – 1. If it is a ripe mango with a lot of sweet pulp and not fibrous, it is more
convenient . If it is a fibrous variety, then we will need to sieve the pulp to remove the fibrous content. The mango I used did have a small amount of fiber, which i removed.
Home-made Yogurt – 1/4 cup.
Milk – 1/8 cup
Sugar – 3 Tsp . This can be adjusted according to taste and also sweetness of the mango.
Cardamom Powder from 2 pods. Remove the outer thick peel. Powder the inner black seeds using pestle and mortar. If you have prepared cardamom powder use 1/4 tsp.
Ice OR Cold water – 1/3 cup
Mint Sprigs to garnish.
First peel and cut the mango into big chunks. Then blend these chunks in the blender to form a smooth paste. Then sieve this pulp to remove the fibrous content. For this run a spoon/ladle over the pulp in the sieve to send it through. Make sure you clean off the base of the sieve to get the pulp stuck to it.
Then add the sieved smooth pulp back to the blender. Add yogurt, milk, sugar and blend until its all mixed well. Then add ice or cold water. Blend again.
Pour into glasses. Garnish with sprigs of mint.
