First Cook or steam the potatoes, peel and mash them.
In a pan, heat oil, once that is heated add mustard seeds allow them to pop. Then add chana dal, urad dal, green chilies, hing, curry leaves and saute briefly until the dals turn very slightly brown.
Now add the chopped/diced onions. Add a pinch of salt. Saute, cover and cook on med-high flame for 1-2 min until it starts to brown slightly. Then reduce the flame to medium, stir and cook covered until the onions soften. Add turmeric powder and mix. Add the cooked, mashed potatoes and salt to taste. Saute well. Cover and cook for another 2-3 minutes on low flame so that the flavours get absorbed into the potatoes.
Mix in 1/2 – 1 tsp lemon juice (optional), garnish with 2 tbsp fresh coriander.
alternatively, you can slice the onion instead of chopping it fine. follow the rest of the recipe as above.
