tomato cucumber raita is a really quick and easy raita to prepare. it does not involve any complex steps. a crunchy cooling accompaniment to a meal.
tomato – 1 chopped into small pieces
cucumber – about 3 inches length chopped into small pieces
natural yogurt or curds – 3 tbsp
salt to taste
turmeric powder – 1/8 tsp (optional)
for tempering – oil – 2 tsp, mustard seeds – 1/4 tsp, chana dal – 1/2 tsp, urad dal – 1/4 tsp, hing 1 good pinch, green chilli – 1 chopped fine, curry leaves – 3-4
fresh chopped coriander to garnish – 1 tbsp
mix chopped tomatoes, cucumber, salt, coriander, turmeric powder (optional)
prepare tempering in a small pan by heating the oil
add mustard seeds and allow them to pop. add chana dal, urad dal, hing, curry leaves, chopped green chillies
turn off the heat once dals turn golden brown, transfer the tempering immediately to the prepared mixture.
