Vegan Persimmon Fruit and Banana Smoothie:

Here is my first contribution to the party- Vegan, Gluten-Free Persimmon Banana Smoothie :
What better way to begin a party than with a refreshing beverage?!
Since I have begun using persimmon fruit in my recipes, I needed to learn a bit more about this beautiful fruit…. It was interesting to learn that there are 2 kinds of persimmons – fuyu persimmons and the hachiyas. While the fuyu variety is used in salads, the hachiyas when really ripe can be used in puddings, breads. One point to remember with hachiyas is that when they are yet to ripen, they have a bitter, chalky flavor, nobody would wish to eat!
The vibrant orange-red color of the hachiya fruit is enough to draw anyone’s interest I’m sure. … Its in season now from November to February….Next time you are in the market, don’t restrict yourself to apples, bananas and apples. Pick up some of these sweet yet mildly flavored persimmons too.
Along with the delightful much loved flavor of banana, we have here the nutrient packed and fiber packed persimmon fruit in this recipe.
banana – 1 ripe , peeled, roughly chopped
hachiya persimmon fruit – 1/2 roughly chopped
good vanilla extract – 1/2 tsp
soya milk – 1/4 cup
ice cubes – 2
pistachio nuts – few, roughly chopped for garnish
- banana - 1 ripe , peeled, roughly chopped
- hachiya persimmon fruit - ½ roughly chopped
- good vanilla extract - ½ tsp
- soya milk - ¼ cup
- ice cubes - 2
- its very simple as smoothies generally are!
- add the chopped banana, persimmon fruit, soya milk, vanilla extract, ice cubes into the blender and blend to form a smooth mixture
- enjoy topped up with chopped pistachio nuts
for non-vegan version, use cows milk instead of soya milk

Hi I am Anu and I blog at www.easybitesonline.com . Although we belong to a different faith, we as a family definitely enjoy the holiday season and Christmas day. As soon as lights go up in the neighborhood, the festive spirit and anticipation of the celebration begins! My daughters love decorating the Christmas tree, writing to Santa and await eagerly for their presents. My younger daughter who is 6 for sure believes in Santa and insists on placing a snack and a carrot in the kitchen ready for his visit 🙂 There have been times when either myself or my husband are at work and therefore don’t get to become involved with any happenings. If otherwise however, we tend to invite friends over for dinner, since our families live in India.
My dishes I’m presenting here are – vegan, gluten-free beverage and dessert – Persimmon Banana Smoothie and a Raw Persimmon Tart. I am so excited to be sharing this with you all. Determining the dishes which had to be vegan and gluten-free was a challenge, however I do hope you will enjoy my dishes. Merry Christmas to you all! Let the party begin!
