Pina colada, a cooling official drink of Puerto Rico, when prepared alcohol-free is termed Virgin Pina Colada. I have been wanting to share this cooling drink recipe since long now.
Here in the UK (my home country), summer has only just begun, while it’s on its way out in India (my birth country) Not that you could resist having the refreshing Pina colada whatever the weather, wherever the abode 🙂
It’s time for our blog hop again and the theme, mocktails.
The country celebrated a great day for sport yesterday at Wimbledon; with the mixed doubles, wheelchair tennis trophies and of course the men’s singles all pocketed on the same day. Some great display of talent and hard work. While Andy Murry celebrates with his team on his second Wimbledon win, we celebrated with our delightful, freshly prepared, homemade Virgin Pina Colada.
This easy to prepare, Virgin Pina Colada can be put together in several different ways, with the slightest of variations. You can find the Virgin Berry Pina Colada recipe here.
Method For Virgin Pina Colada:
- 250 grams chopped pineapple (about 2 cups)
- ½ cup coconut milk (freshly prepared coconut milk tastes best - use the thick part)
- 2 cups ice cubes
- Chop the pineapple, add them to the blender.
- Add in ½ cup coconut milk (the thick part or the first extract)(you can use coconut milk from a can)
- Drop in the ice cubes.
- Blend until everything is well combined.(I like to leave a few pieces of ice cubes un-blended for cooling splash of texture)
- Serve chilled with additional ice cubes if needed.
I dont like to add sugar. You may add if you wish.
The balance in the flavors of the drink depends on the quality of pineapple used. As I prepared it 2 cups of chopped pineapple matched perfectly with coconut milk added. Do taste and adjust if need be add a piece or two and blend.
Stepwise Pictorial For Virgin Pina Colada:
Chop the pineapples, add them to the blender.
Add in ½ cup coconut milk (the thick part or the first extract)(you can use coconut milk from a can)
Drop in the ice cubes.
Blend until everything is well combined. (I like to leave a few pieces of ice cubes un-blended for cooling splash of texture)
Serve Virgin Pina Colada chilled with additional ice cubes if needed.
